Whatever Narstin's spell did to Derendil, he looks a little bit more... wild. You're not so sure anymore onto who Derendil is looking to... vent his anger.
Asking for DM Inspiration for post 1431. (Krizz gave me a great set-up.)
"We have to take care of each other, because no one else is going to do it."

Beegred would discuss with the group what to do with Derendil. I had something like this in mind (but speak up with alternatives or improvements):
When Derendil is well bound and pinned down, splash him in the face to wake him up (with 1 hp). Have someone with a sword visibly near his throat (but don't kill him!).
"Are you calm now? You are alive. You are not in danger, unless you continue to attack other group members. Are you calm now?" Keep repeating this until Derendil gets bored and calms the hell down.
Every member of the group sacrificed during the escape. (Well, not the new members, but Beegred will ignore that point.) So until they reach their destinations and can part safely, they need to protect each other. Xilyrah has started to zone out, and Sarith is a moody prick, but they aren't the enemy.
Derendil can't decide on his own to start killing other members of the group. If he suspected others of being demons, he should have mentioned that to the group, and the cleric could have done his mojo... They aren't demons, so ripping off their flesh would have been something difficult to apologize for later.
Derendil stays tied up. Let him know that In the morning (after he/it is in better shape and had enough food and water) he has a choice. He can stay with the group, with the understanding that he doesn't rip off anyone's flesh (and he will be slain if he makes the attempt again). Or he can leave in peace, to find his own way in the Underdark, as long as it is away from the group. (Rodolfo would give him advice from the map, on where to go.)
If he stays, he needs to make the promise on his word as a (former) elf prince. He also needs to have some tangible reminder to keep this promise (like a colorful pebble, or a string around his pinkie finger), so he can stay focused on calming down the next time he starts going savage.
(I'm assuming that Derendil leaving is best for getting the NPC numbers down. Any Persuasion rolls should be for Derendil leaving on decent terms with the group, or at least not holding a grudge, rather than trying to persuade him to stay.)

Just FYI, this is actually Derendil's backstory. It is not my attempt to get rid of NPC's. So you don't have to lean towards getting rid of him because you think that's what the DM is trying to do.
Had I thought we needed to get rid of him I would have ignored Beegred suggestion of taking him alive and finished him off just because he attacked me.
Personality Traits
I enjoy being strong and like breaking things. I face problems head-on. A simple, direct solution is the best path to success.
Not trying to get rid of him. Just pointing out that either stay OR go are both good options. The only bad option is if he goes berserk and starts attacking the group again.

Today was a holiday here in Canada, so that's why I'm posting tonight instead of this morning. But no one posted during the day, so I'm still waiting on the group to resolve what happens with Derendil. Last we left off, Rodolfo Identified what is afflicting Derendil and almost went mad doing it.
Rodolfo stays a few feet away and doesn't understand the words either, but the tone is clear enough.
"Hey, calm down everyone. Staying here any longer than we need to just harms us all."
"Derendil, while you were unconscious I tried to understand the magic that is affecting you. It is very powerful, well beyond my knowledge to fully comprehend, but I did learn some details. Your thoughts are of course your own, but are also being magically guided to distrust everyone and everything. It makes sense and is OK. You are with us and we are with you."
Walking all up close to Derendil he says, "All that said, I have some ideas on how to possibly rid you of this enchantment. It will take some time, but I am positive it can be done."
He then undoes the binds and helps him up.
"Lets continue, we are not far from our destination, but neither can we tarry."
The language barrier is annoying, but Beegred would have had to ask Stool to meld for all the previous conversations to have happened. Krizzibond narrated that he saw Derendil looking aggressive and heading towards Sarith, moving to intercept, so I ruled Krizzibond would have been out of the meld range. However, to make the rest of the encounter easier, lets say that the meld affects everyone else (Not Krizz, not Sarith). So you would have understood what Derendil said in elvish. I will go back and edit to include 'telepathic' as well.
In order to get things moving again, I resolved the Derendil situation given what has been said and done. If anyone had things they wanted to do or say, let me know. I can retcon conversations or other ideas you may have.
At a fast pace, you travel 15 miles towards Neverlight Grove. (145/216)
Given you started the day with 13 pounds of food, I assume you are travelling at a fast pace. No foraging and a penalty to your perception checks.
Start with 13 pounds of food, 3 gallons of water.
Foraging: none
Narstin uses up a spell slot to conjure water and you all eat 11 pounds of the day 22 food, throwing the rest away. You end with 6 gallons of water in waterskins.
I don't think it was specifically stated if it was for any kind of payment or not. The question was just about teaching and learning, without mentioning payment, but this is up to you Kerrec.
Found this as well:
Yes, 250 gold worth. 5 gold per day (per 8 hours) of progress.
I'm doing this in my home game as well. I ruled there that 80 gold (of progress), you can start to understand, but not read, write or speak. At 160 gold (of progress), you understand spoken undercommon well, read poorly, speak poorly but can't write. And at 250, you can fluently read, write and speak.
So it would be 16 days to gain basic understanding.

One small mistake in your damage.
Dice are doubled, not your modifier. It should be 4d6 + 3 on a crit. So 20 total damage.
Oops - I'll edit my script - not sure how I missed that....

What do you do next?
Rodolfo is staying nearby, but out of any physical confrontation in case that continues once Derendil wakes up.
I guess we're just waiting for him to wake up and see what his mood is.

Just to look up and clarify for myself the language learning Rodolfo is doing.
Rodolfo got agreement to begin learning Undercommon on day 20 as best as I can determine based on post history on both threads (https://www.dndbeyond.com/forums/d-d-beyond-general/play-by-post/27393-official-thread-out-of-the-abyss-by-kerrec?comment=1402).
