To sum this up: You have a 2 handed maul, 3 javelins, a short sword, a shield, a hand crossbow with a bolt case, without a backpack to put all this stuff in or strap it to. And you're carrying Derendil?
It is a drop in the bucket, but he doesn't have a short sword.
Until Derendil is back on its feet, we should get Xilyrah and Eldath to carry some of those items, to lighten the load.
The shortsword is in Ferriman's hand, right? And the crossbow and bolts can go to someone else; Tozer won't use them. They lack barbarian-style.
So, I'm thinking of using a bit of rope to lash the shield and javelins to Derendil. This, of course, means Tozer will have no ranged weaponry at his disposal. The shield may be of use later if/when Tozer has a one-handed weapon. The +2 to AC is tempting.
Let us hope that carrying Derendil is truly temporary. Tozer is little more than a pack mule at this point.
It's fine. I just want you all to be conscious that you have armor and weapons and little else. You can't take and carry just anything. You'll have to loot, steal, buy or make stuff like backpacks, waterskins, casting foci, etc...
Please sort out between all of you who has what equipment, and add it to the equipment section of your character sheets. If I only have a few minutes to resolve some posts and you say you have something, but its not in your character sheet, then I will rule you don't have it. I can't always take the time to dig into the thread to see if you do or do not have what you think you have (theoretically, I haven't actually had to do that).
And of course, it's an honor system. I'm not going to police your equipment. I just hope playing honest is more fun for all of you than cheating.
For the food/water table, Valthana should be added. (And I goofed on my calculations. I had Tozer and Narstin as Small instead of Medium.) So we need 10 lbs per day.

Also, for a holy symbol for my shield, would I basically just need to find materials to make a rudimentary paint, then spend time to actually paint it on?
Sure, and a bit of praying to bless the whole thing. But I would rule a painted on emblem using improvised tools and materials wouldn't be permanent.
Makes sense. Temporary beats nothing. Lets me use spells that need material components at least. Fortunately a lot of my spells don't need material components, but need the symbol for Channel Divinity as well.
Ready to run. And also happy with Quasi's setup for marching order/jobs/etc (Thanks for putting that together!). Though Narstin would also like to find some time to search for materials to paint his holy symbol. Probalby not the first day, when we relaly need to find some food and water to get us going, but preferably bfeore too long.

I haven't brainstormed in what ways such an emblem could be damaged. If you want to participate and come up with ideas, I'd welcome it.
In general, I was thinking of allowing everyone to sacrifice vital equipment instead of taking damage, once per battle, if you want. I'd allow the decision to be made after seeing the damage roll, so on a particularly bad hit (even crits), you can sacrifice gear instead of losing the HP.
Though Narstin would also like to find some time to search for materials to paint his holy symbol.
DM question: When foraging for food or water, is it also possible to keep an eye out for other interesting materials. Or would looking for the materials prevent foraging?
(Beegred wants that sprig of mistletoe, but not at the cost of foraging.)

No, we'll make those separate and triggered by the environment. If you all tell me what you're looking for and/or what you're trying to accomplish, then I'll have you make an appropriate roll to see if your character thinks something would make a good substitute when that something is around.
For example, my tabletop group fought a Giant Rocktopus (an out of water octopus) and killed it. At this point, I know Narstin wants paint. Octopi have ink sacks. I'd ask Narstin to roll a Nature (or something) and if successful, I'd say, "Hey, there is a lot of ink available here that would work as a material to make an emblem on your shield."
And feel free to offer suggestions, like "Hey, so and so burnt that bad guy with a fireball. Can I use the ash to make an ink?"
As for a Sprig of Mistletoe, that's something that grows on trees. I won't deny it to you over the whole campaign, but you have to meet someone that deals in magical reagents, or is a magic user to find it. (Just a magic user. I won't insist on a correct class of magic user.) Then you'll have to buy, steal, kill and loot or find some other way to get a hold of it.

I was afraid you were going to say that. (I was hoping that we would find the spot in the Underdark where everyone dumps their Christmas stuff after the New Year.)

Per post #673, it is time to declare who is fulfilling what tasks and make foraging rolls (auto filled based on post#692):
Navigation: Sarith w/help from Buppido
Watch: Valthana, Stool, Beegred (passive)
Foraging for water: Tozer, Eldeth, Jimjar and Xilyrah
Foraging for food: Beegred, Derendil and Narstin
Stool has 120 ft of Darkvision and a Wisdom bonus of Zero. Valthana has no darkvision (disadvantage because of darkness, unless someone gives her a source of light) and a Survival (Wisdom) bonus of +1.
Need to sort out the food/water/tasks before I can continue posting. Also, is light being provided to Valthana and Beegred, or are they being guided through darkness?
Darkness creates a heavily obscured area. Characters face darkness outdoors at night (even most moonlit nights), within the confines of an unlit dungeon or a subterranean vault, or in an area of magical darkness.
A heavily obscured area—such as darkness, opaque fog, or dense foliage—blocks vision entirely. A creature effectively suffers from the blinded condition when trying to see something in that area.
Blinded
A blinded creature can't see and automatically fails any ability check that requires sight. Attack rolls against the creature have advantage, and the creature's attack rolls have disadvantage.
Watching for danger doesn't entirely depend on sight, so I'll rule Valthana (and Beegred) can roll with disadvantage. If Beegred depends on his passive perception to help watch for danger, then he has a -5 penalty while blinded. Searching for food while blind automatically fails.

So, we must declare who is foraging before the rolls are made. For day 1, how about two rolls (Eldeth and Tozer) for water and one roll (any volunteers?) for food? Lack of water brings severe consequences quickly; so more manpower should be devoted to that task.

You notice I suggested 4 people for water, including both people with the +5 Survival. On average, the four of them should find 12.9 gallons of water. That is more than necessary, but we need to be protected for bad-roll days.
Food will be a problem, with 10.0 gallons on average for the 3 people assigned. (Beegred finds twice as much food, but he might still roll low enough for no food.) We might add Valthana to food as well, even though that means only Beegred and Stool will be Watching.
I vote that on Darkness days, Sarith uses his Dancing Lights (dim light) along with Narstin's Light cantrip. (He may want to drape a thin cloth over the Light, so it is not so bright.)

Narstin is carrying Valthana with help from Jimjar?

Xilyrah has already run ahead to beat Jorlan to the wand.
