I know there has been a lot said here, so I will answer (again), hopefully with strictly information you can use.
Is this patchwork armor light, medium, or heavy armor?
From their entry:
They reuse the weapons and armor of their smaller foes, stringing shields into scale armor
So, it could be any, but given their size is Huge (2 steps larger than player characters), their armor as a whole cannot be used by player characters.
What AC bonus does this patchwork armor provide?
As you yourself provided, and as per their entry, a flat 15 AC, when used by the Giant. For a player, it could be any number of sets of magical or nonmagical armor, and/or shields. So a player group could potentially all get full sets of a given armor if you want. Or, the armor could be too damaged for players to salvage.
What is the natural AC of an unarmored Frost Giant?
Applying the basic rules, it would appear to be 10 - 1 = 9 AC
So, if you are the GM, should your players defeat the Frost Giant, they could recover basically whatever armor and/or shields you want them to, or none at all. If they manage to catch it without its armor, the AC could be 9, or if you prefer higher, perhaps use Barbarians Unarmored Defense to make it 14 instead (10 -1 from Dexterity + 5 from Constitution).
