Hi all. Please explain what blatantly obvious detail I am missing. A pseudo dragon is a creature with a CR of below 1. Why will DDB not allow me to select it from the list of potential sidekick creatures?

Pseudodragon is equal to or less than CR1.
I recognize that the pseudodragon makes a poor warrior since he cannot wield weapons and since his natural weapons do not increase in damage potential as he grows. Although . . . would the DC of his poison save increase with additional sidekick levels? DC 11 is pretty easy to beat.

The DC should go up when the pseudodragon's proficiency bonus goes up, since save DCs are proficiency-based. Likewise when its relevant stat goes up. For the poison, that's probably Con.
The maximum legal CR on a sidekick is 1/2, not 1, but pseudodragons are CR 1/4, so that's immaterial.
From what I can tell, when you go to add a sidekick as an extra, the list of monsters filtered using the sidekick rules is empty, so this isn't a pseudodragon issue. And when I turned off filtering and add a pseudodragon anyway, there's literally no interface for specifying what kind of sidekick, how many levels, etc. I don't think that sidekick dropdown works the way you think it does. I don't know what it's intended for.
Automated adding of sidekick templates to monster stat blocks is not supported yet. It is kind of a big technical leap from the way monsters are currently coded.
You will have to homebrew your sidekicks yourself, and copy paste the sidekick's changes in.
It kind of depends. Are you talking about a familiar? Normally those can't attack on their own, but they can deliver touch spells, it's essentially you making the attack and them delivering it. That's probably why it won't let you make a warrior out of one, as well as the fact that the tech isn't working for Sidekicks yet.

You have to make the sidekick before you can add it to the extras section of you character sheet. To do so, go to the 'Create a Monster' option of the homebrew tools and select the psuedodragon to copy from. Then add all the warrior traits to that creature and customise it as instructed by the rules in Tasha's. Once you save it, you'll be able to add it to your character sheets extras section as long as you have homebrew enabled.
