So I have a Paladin/fighter (lvs12&6), and I've seen that, in other forums, extra attack doesn't stack unless it's a fighter. Does that only apply to the higher levels of fighter extra attack features or should it apply, because the second extra attack WAS the fighters (albeit it's only the first)?
Extra attack will never stack. The Fighter gets extra attack, but the number of extra attacks they get increases. That said, you get the MOST attacks any one class would grant you, following all the regular rules and stuff (Must take the ATTACK action, not Cast a Spell, or Spell Attack for example) So if you reach a level where your fighter would get 3 attacks, you get those 3 attacks, but ignore the "extra attack" feature from the Paladin.

Aside from explicitly being addressed in multiclass rules, Extra Attack is conveniently worded to prevent stacking.
Beginning at 5th Level, you can Attack twice, instead of once, whenever you take the Attack action on Your Turn.
The feature doesn't give you an additional attack - it explicitly gives you 2 attacks instead of 1. No matter how many times you get access to a feature like this, you still would only attack twice. Fighter 11 specifically upgrades you to 3 instead of 2, and Fighter 20 explicitly upgrades you to 4 instead of 3.
As a general rule, few multi-class builds make sense if two classes are higher than 4th level.
Both Paladin and Fighter for example are VERY front loaded. Good reasons to go to 1st, 2nd, and 3rd. 4th is a strong cut off. Usually a level of the other class is better than a feat.
If you were Paladin 3/Fighter 1, would you take the Paladin level to get the feat, or would you rather take Fighter 2 to get Action Surge.
If you were Paladin 1/Fighter 3, would you take the Fighter level to get the feat or would you rather take Paladin 2 to get Divine Smite, FIghting style and Spellcasting?
Once you get to 3/3, then it doesn't matter 4/3 and 3/4 are the same. But 5/3 or 3/5 are both better than 4/4, as Extra Attack the first time is usually better than a Feat.
From that point on, the higher level is almost always better than a feat. A few exceptions, where taking either gives a feat, or levels like Paladin 9, 13, or 17th where he is just getting a new level of paladin spells. Fighter has no hard choices. Each level you either get the feat or something better.
So, from a min-max perspective, it makes little sense to ever be higher than level 3 in your 'off' class.
For example, you cannot benefit from two castings of Bless, and you cannot add CON & WIS to your AC if you have the Unarmored Defense feature from both Barbarian and Monk.
You cannot stack the Extra Attack feature with itself.
I think it's definitely very comparable to AC calculations... if you have more than one potential source of AC, you don't add them together, you just have to pick which one you want to use. Same with Extra Attack... if you do some crazy multiclass that gives you Extra Attack from 3 different sources, you basically just pick one and you're stuck with it.
The thing is, no matter the multiclass combination once you hit a class level that provides Extra Attack, you can only attack “twice instead of once” when you take the attack action. It doesn’t matter how many Extra Attack features you compile, it’s always ever twice instead of once, not one additional attack.
