Reason: I want one of my fellow party members the chance to suplex an Ancient Black Dragon some point down the line and you can only grapple things up to 1 size bigger then you are. Preferably I'd prefer it if it didn't change his form into a beast like Polymorph or Wild Shape.
So I know you can't stack Enlarge/Reduce, but we have that option readily available so that's 1.

He is talking about the part of Giant Might, that says "you become large, if you are not already large". This means you have to use Giant Might first, followed by enlarge. If you would cast enlarge first, Giant Might does not increase your size beyond large.
Now that I take a closer look at the wording of Giant's Might, wouldn't using enlarge/reduce to increase your size beyond medium simply turn off the class feature regardless of when you used the spell, since you no longer meet the prerequisite for the feature to increase your size? The class feature tells you the bullet point applies for its 1-minute duration, and part of the bullet point is the prerequisite for it to work, so why should we think the prerequisite has a different duration?
If you are smaller than Large, you become Large, along with anything you are wearing. If you lack the room to become Large, your size doesn’t change.
By that logic, the ability would be completely useless; you would use it, fail to meet the prerequisite due to becoming Large, and then revert. Although I suppose I see what you're saying, it just doesn't make sense.

If you are a Player, ask your DM if your character might know of options. They might require an Arcana check or the like.
If you are a DM, you can be as creative and lenient as you want to give the players a chance and a fun move... (Choji's Expansion Jutsu in Naruto comes perfectly to mind).
Outside the box options would be to dominate a creature and have than one forced to do the move... or swapping into said creature with a possession effect... possibilities are endless!

Remember there are Rules as Written (RAW), Rules as Intended (RAI), and Rules as Fun (RAF). There's some great RAW, RAI, and RAF here... please check in with your DM to determine how they want to adjudicate the RAW/RAI/RAF for your game.

Duergar Rune Knight. Or generally Giant Might combined with enlarge.

Funny you ask about this...we had a Goliath Barbarian Enlarged that did just that with a Purple Worm. :)
