So looking at the condition categories and some of the creature types there seems to be a general omission of information. For example shouldn't all undead have immunity to charm, poison, and possibly unconscious conditions? Looking through the stat blocks some do not seem to have this information listed. I searched through the Monster Manual and DMG but could not seem to find this information. Any links to find a complete list would be great.
It is worth noting that many of the effects you would expect undead to be immune to that aren't listed as things they are immune to in 5th edition still don't actually work on them because the text of game elements that cause those effects are worded in a way that excludes undead.
For example, sleep calls out that undead aren't affected by the spell in the last sentence of its description, and charm person only targets creatures of the humanoid type which even humanoid-shaped undead are not because they are creatures of the undead type.
So, using the information from above that the stat block will have the immunities listed aside from anything specifically mentioned in spell or ability wording, I can cast Fear on an undead creature and it will be effected by it since undead are no longer immune to mind-effecting spells and Gear does not specifically say it excludes undead... this may seem very basic but I am just trying to figure out the RAW so I can become a little more familiar with the back-end mechanics.
Yes, Fear will work on undead because it doesn't say it doesn't. It is also not really a mind spell, it creates an actual illusion that the monster can see and that it is afraid of. For undead perhaps they see the same thing they see and feel when a Cleric turns them. In contrast, Cause Fear specifies that it doesn't work on undead and constructs, I assume because it needs to be planted in a mind of some sort. Many undead and constructs are also immune to the Frightened condition though, so neither spell would work on them.

The spell actually covers the reason it doesn't work on undead or constructs. It says "You awaken the sense of mortality in one creature..." which doesn't work on undead or constructs because they do not have the inherent eventuality of death required.

According to the designers of 5e, the stats block of monsters contains all the information necessary.
If an undead is immune to the charmed or unconscious conditions, the stats block would say so.
As Filcat said. Contrary to previous editions, creature types don't have rules baggage tied to them. Anything a creature has is in its stat sheet.
You can see a few common traits according to the creature type, but you can see unexpected variations too (which, in my opinion, is more interesting).
Plus, a DM doesn't have to juggle between the creature and the rules of its creature type. :p
