So I'm starting out, and I have a question about XP leveling. So, let's say I'm level 1, and I gain 2700 xp. Would I get to level 3 because I have that much, or would I get to level 2 and have 1500 xp left over?
Your XP doesn't reset to 0 when you reach a level, it sticks with you. So, getting 2700 xp when you're level 1 would mean you're level 4 and only 3800 xp away from level 5.

The Experience Points on the chart are your total experience points earned. They don't set back to zero when you level up, so you compare your current total XP earned, to the chart, and that tells you what level you've reached.
And check that chart again... because 2,700 Xp gets you all the way to L4.
Just to add to what the others already clarified, you may want to also discuss with your DM as well. By the rules, you would be a 4th-level character, but the DM may have special rules concerning leveling up. For example, they may require "training time" for each level, which might mean that you'd have to progress to 2nd-level then 3rd-level before eventually becoming 4th-level.
Again, this example isn't the normal process by the rules, but a DM might handle things differently... Which is why I'd recommend asking your DM as well.
