I have a player who's a 7th-level Fighter In a discussion of how many attacks it could make on the Fighter turn using Action Surge and have Haste cast on it.
The basics of Action Surge and Haste Action Surge: On your turn, you can take one additional action. Haste: ..., and it gains an additional action on each of its turns. That action can be used only to take the Attack (one weapon attack only)
Our initial math worked out to four attacks:
Two attacks from the Attack action Two attacks from the Actions Surge attack action
It's the Haste spell where we are at our differences. I say it is just one additional attack, whereas they believe it is two.
Any input on the correct answer would be appreciated.
You are correct on all accounts. The haste spell specifies that, if the extra action it grants is used to take the Attack action, the attacker can only make one weapon attack. This is more specific than Extra Attack, and thus takes precedence.

Look at what you've done. You spoiled it. You have nobody to blame but yourself. Go sit and think about your actions.

Yeah, Haste is very clear about how it interacts with the Attack action. The only reason to include the phrase "(one weapon attack only)" is to clarify how it interacts with features like Extra Attack or Multiattack as normally a creature is only capable of making one attack when it takes the Attack action.
To be precise, both features grant an additional action, and one does not have any impact on how the other functions. Action surge provides one additional action that is unconstrained. Haste provides an additional action that specifically constrains the amount of attacks made with it to one. Five attacks total would be correct for your circumstances.

I agree with the above posters. Extra attack Action Surge gives another action. Haste gives another action (one attack only) on each of your turns. Since extra attack Action Surge isn’t giving another turn, just an action, Haste can only allow 1 attack if you use the extra action to take the Attack action. Total of 5
