Agree with Coder, Cantrips level up too and are close to analogous to a basic melee attack being added at each rank up by adding dice to the effect. The whole intent is that they are the "weapon" attack of a caster. For an EK, you balance the advantages of a cantrip/spell (magic damage, better range, maybe a save instead of a to hit, being area spell) vs the ability to attack multiple times with a weapon. It is a flexibility thing and something to decide in each situation.

When it says that I have two attacks per action, can that relate to cantrips? Could I cast two cantrips that have a "to hit" on them?
Extra Attack only applies to the Attack action. Casting a spell uses the Cast A Spell action.

So essentially, at higher levels when you have alot more extra attacks, all that is voided if you cast a cantrip?
Cantrips scale up as you level as well.

Plus at 7th level as an EK you get to make a bonus action attack if you cast a cantrip (increases to bonus action attack after casting a spell)
