The damage is the result of the spell outcome wether attack or saving throw, not what the spell originally create, most spell that deal damage with instantaneous duration only last an instant, it is literally the meaning of it.
I know you’ve already acknowledged the Sage Advice you posted, but the part after what you shared goes on to treat the healing of Cure Wounds exactly like the undead created by Animate Dead, so the distinction you’re trying to draw here is not one acknowledged by the rules or their designers.
On a completely useless note, I would also add that evaporation isn't the water disappearing it's just becoming gas. So the water is still in your body and water would condense to reestablish equilibrium generating roughly the same amount of liquid.

That's a strange premise to base game rules on. Very feeling-based, not precisely logical.
But the line and the water evaporates in one minute obscures what is RAW. a cup of water would not normally evaporate in one minute, even misted water on a surface normally wouldn't outside high temps. so it is not normal non-magical water. So those feeling are fairly logical as you are trying to parse RAW by using a guess at what is RAI using other spells that cost slots. The English language is not so precise you can only interpret one RAW answer out of a sentence or two of vague rules.
A clearer RAW wording would be them adding a line, if drank before it evaporates you gain the benefits of hydration from it. A human would normally need 16 castings of this spell per day to get their normal intake in water.(as an aside a gallon of water is a lot of dang water to drink a day, that seems high to me, but I guess the assumption is you are just that active as an adventurer)
Now my assumption is since they added the line about it filling a cup the intent is it can be used for this as there really aren't that many other reasons to fill a cup. And the evaporation line is just to let you know you can't spam cast it in the morning into a canteen to cover you water per day, you need to cast it as you want to drink. But that isn't RAW as RAW is not explicit on what happens if water that you drank magically evaporates. It is my assumed RAI, but for all I know the cup line was just an attempt to give you an idea at how much fake water is generated. Or because they wanted a comedic throw water in peoples face cantrip.

The spell is cast and released into the environment and then "travels" to a specific place. At that place, a magical effect is created that persists for the duration. The consequences of what happens when that magical effect interacts with creatures or objects or other aspects of the environment are generally permanent unless specified otherwise, such as "for the duration" or some other specification.

Maybe another example we could mention is Find Familiar. The spell ends the moment the familiar is summoned, but the familiar remains.
