If a monk is dual wielding daggers, has a multiclass level that gives him mastery with daggers, can he make 2 attacks with the daggers and still use his bonus action to make an unarmed strike/use flurry of blows?
Unarmed Strike specifically notes headbutts, kicks, etc. It's not just punches. My monk likes to use his Quarterstaff two handed and then use it to vault into kicks.
They way I think of Dnd fighting is when you take the attack action and only got one attack for sword fighting, you are making small attacks that get parried and dodged like Star Wars or some other sword fighting but then you able to attempt a really good blow to break their defenses. So reality a lot of “mini” attacks are happening and then you are risking a bigger attack to break through their defenseshttps://mobdro.bio/ .

A free hand is not a requirement of the damage or shove options of an unarmed strike but is a requirement of the grapple option. So as long as you're using the damage or shove options, you can use flurry of blows even while you're holding two daggers, you just can not benefit from the grapple option.
Had a further thought on this one, a Monk 10/Fighter 2 can make 6 attacks around, using scimitar, shortsword and flurry of blows. Increasing to 8 attacks a round when using Action Surge.
You do an attack with the shortsword, an attack with the scimitar, another attack with the shortsword and then flurry of blows (unarmed attack x3, Heightened Focus).
For action surge you can do shortsword x2, shortsword+unarmed attack or unarmed attack x2.
So by level 12 you could get up to 6 attacks per turn, and 8 when action surging this particular mix. An additional benefit, you pick up a fighting style too, so can pick up two-weapon fighting of defense on top of this.

Other than that, yep, a level 10 monk/1 fighter could have 6 attacks in a round due to the Nick weapon mastery ability on a scimitar that lets you move the two weapon fighting bonus action attack into the attack action freeing up the bonus action for a martial arts attack or flurry of blows. Also, by level 10, the weapons do d8 damage (d10 by level 11 monk) since the martial arts damage die can replace the base weapon damage die. Both the short sword and the scimitar are monk weapons since they are martial weapons with the light property.
The benefit of pairing the scimitar with a short sword is the Vex weapon mastery property that gives you advantage on the next attack after hitting with the short sword.
The benefits of 2 levels of fighter are Action Surge and Tactical Mind. Action surge increases the attacks from 6 to 8 once/short rest so it is up to you whether this is a good use of a level.
Just wanted to mention that the Defense fighting style doesn't usually work for a monk since it requires wearing light, medium or heavy armor which monks don't do typically :)
yup, forgot about the armor requirement, whoops. Still two weapon fighting is an option for a tad bit more damage... there is also blind fighting and interception are also options. I think I'd choose blind fighting given that.
