If I have a level 19 sorcerer with all level 9 spell slots and decide to take a level in cleric as my final level, would I gain access to all the available cleric spells since I already have the maximum spell slots a caster can obtain? Or i unlock only level 1 cleric spells? Thank you
No just those that L1 cleric can access because you determine what spells you can prepare for each class individually, as if you were a single-classed member of that class.

No just those that L1 cleric can access because you determine what spells you can prepare for each class individually, as if you were a single-classed member of that class.
You can check the Multiclassing rules for example of how it's done.
The key part is the spells prepared section in the Multiclassing rules, just below the table.
It should be noted that you can use your higher level spell slots to upcast the Cleric spells. You just can't prepare higher level Cleric spells.
