As a lvl 5 Ranger with Hunter subclass and Dual Wielder feat, I plan to do this:
1. take an attack action to hit with a Scimitar in one hand
2. take another attack with Scimitar, granted by Extra Attack of lvl 5 Ranger skill
3. attack with a Shortsword in the other hand as part of the same attack action due to Nick mastery with Scimitar
4. Sheathe both weapons as a free action that is part of the attack (Attack Action entry in the Glossary) and the feat Dual Wielder that allows to equip/unequip 2 weapons
5. Draw a Longsword as TLOI and hit with it using BA granted by Dual Wielder with Advantage on the attack due to Vex of the Shortsword.
Maybe....it is unclear which weapon has to be the Nick weapon - the first attack or the one making the extra attack. At most of the tables I have played at, we have decided that the extra attack has to be with your Nick weapon (out of 10-12 tables I have played at, only 1 DM has ruled it the other way). So the attack chain would work something like this Attack 1 (Shortsword) ->Attack 2 (Shortsword) -> Nick Attack (Scimitar) -> Bonus Action Attack (any non-two-handed weapon). If you have Two-Weapon Fighting (fighting style feat), you would add your ability score modifier to all 4 attacks.
I think the shortsword attack technically goes in the 2 spot, not 3, and I'm not sure what the TL part of TLOI means, but otherwise, I think that's all legal.
It's legit, aside from the aforementioned Nick question (ask your DM), but you're setting yourself up for fewer attacks on the next round.
You can, by the rules, draw or stow a weapon with each attack you make as part of the attack action, so you can probably shuffle your weapons around better. (However, some people do not like that rule, and do not allow it. Check with your DM.)

Time-Limited Object Interactions, probably.
EDIT: I'm ruling the Nick weapon mastery is activated when you make the Light additional attack. As mentioned in the thread, RAW allows it on either attack (my ruling is purely based on the article Your Guide to Weapon Mastery in the 2024 Player's Handbook [SAC, I'm looking at you])
While your scenario is possible and can even make up to 5 attacks with Horde Breaker, at my table there would be a small change as i also require the extra attack to be made with the Nick weapon if you want to not use a Bonus Action. First, your scenario assumes weapons are already equipped, but suppose they don't then;
1. Take the Attack action and equip Shortsword + Scimitar [Dual Wielder]
2. Attack with Shortsword [Attack Action]
3. Attack with Scimitar* [Nick Mastery]
4. Attack with Shortsword and unequip Shortsword + Scimitar [Extra Attack]
5. Equip Longsword [Free Object Interaction]
6. Take a Bonus Action and attack with Longsword* [Dual Wielder]
