The PHB explains that you roll for height and add that to the base height. Then you take what you rolled on the height roll and multiply by what you roll on the weight roll. Then you add that total to your base weight, and there you go.
Example:
PHB Human -
Base Height: 4'8" + 2d10 [10] = 5'6"
Base Weight: 110lb. + (10 * 2d4 [3]) = 140lb.
Now, take a look at the Guildmaster's Guide to Ravnica. It explains that you do a height roll and add that to your base height. Then you roll on the weight table and multiple the result with the sum of your base weight + height modifier in pounds. So here is the same human with the same rolls as above, but using the GGR rules.
Example:
GGR Human -

Now, this may be explained by Ravnica humans just weigh more, but that is not the case. Loxodons, given the weight rules in GGR can weigh in the 2000s!!!!! But under their race, if you go to Size, it says they weigh in between 300-400lbs, which means that GGR has an error in explaining how the random height/weight tables work.
Additionally, the gith are the same way in Mordenkainen's Tome of Foes. At a maximum roll, a githyanki would weigh 992lbs....
Pretty sure it's a typo in GGtR: the parentheses should be around "Height Modifier in pounds × Weight Modifier" and not around "Base Weight + Height Modifier in pounds".
The other charts looked fine. (Max weight for githyanki is 292lb).
You are correct, I saw the end of the parenthesis for in pounds and assumed it went to the very beginning of the base weight, which would have been the equation I gave above. But because it isn't that, you are correct. MToF is correct. It's just GGR.
