In that case, go to Game Rules -> Monsters and filter by "humanoids" and desired CR level.
In that homebrew race, you're reading his description wrong. "Choose two of the following types of forms: Beast, Dragon, Elemental, Fey, Giant, Humanoid, and Monstrosity. You may shapeshift into any creature of the types chosen as an action, as long as the CR of the creature is available for your level and is of Large or smaller size. The creature must also be one solid material creature."
So, it sounds like you've chosen "humanoid" as one type. You can also choose one of beast, dragon, elemental, fey, giant, or monstrosity. (Filter in the monsters tab the same way as above.) For however many shifts you have available per rest (CHA modifier +2), as long as you pick something under CR 1/2 (for level 3 by the table) you can choose anything tagged either "humanoid" or the other category you chose. You're not limited to picking a few specific forms to use.
Part 2 - The written race is a bit unclear, but I'd say you can shift into the "form" of an acolyte, but you don't suddenly get spellcasting abilities just by changing shape. I'd say you get to keep whatever spellcasting ability you already possess, so long as your new form is physically able to speak and gesture in a way that lets it cast spells. (i.e., even if you're a caster, you can't cast a spell if you've turned into a gelatinous cube and don't have a mouth or hands.)

Shapeshifter? Do you mean the character races Shifter or Changeling? Because neither of those races work as you describe.
