Xanathar's Guide to Everything states, "As part of a long rest, you can use alchemist’s supplies to make one dose of acid, alchemist’s fire, antitoxin, oil, perfume, or soap." And that's it? No more? No less?
One of the people in my campaign wants to try to recreate a potion that he already saw, "Potion of Giant's Strength." Is it possible or is he only limited to those 6 basic items listed before?
If there is more, i would LOVE to gain a better understanding of how they work.
They can make any potion with those Alchemist's Tools - it's just a matter of time and supplies. Supplies to craft anything are usually suggested to cost half what the final product does.
As for the time it takes to make it - well XGtE suggests 8 hours per 25 gold of the product (iirc). So depending on how much you've got the Potion of Giant's Strength costing in your game it could take them many many in-game months to make it. That's something that's entirely up to you though.
Very general rule is, that you need 50% of the potions gold value in reagents plus the 8h per 25 gp worth of materials as Emmber wrote.
You have to come up with your own rules in addition, regarding recipes and known potions. Alternatively, you could use some of the rules for creating magic items.
As Emmber said, you can craft any potion (with the possible exception of a healing potion which technically requires an herbalism kit, but that's more DM fiat which is why I say possibly) with alchemist's supplies, those ones listed are what you can make with limited components.
Otherwise, your potions will take X amount of days and X amount of gold's-worth of materials, where X is relative to the quality/rarity of the created potion.
The reason for this is that alchemist's fire, poison, soap, perfume, etc is all alchemical, potions are technically "magic items" and therefore you need to rely on the magic item crafting rules.
Heath - I looked at the components of the spell and I'm making the player have the component in order to make the potion. On top of that, also has to pay half its retail price and spend the time to brew it up. For example: Potion of Hill Giant's strength will take 75gp, 24 hrs of work time, and clippings of a giant (creature type, not name - so giant spider doesn't work). This seems to help balance the intentions of making an OP potion.
Brian - I was also thinking that the puff of smoke could be like a ninja smoke bomb.
The DM in me wants someone to throw the smoke bomb down but rolls a poor stealth check which then gives the visual of, "You throw the smoke bomb to the ground yelling, 'NINJA VANISH!!' A flash of light and a puff of smoke fills the air.... but not very well. The light is dim and the smoke is only wisps as you continue to stand there, helplessly watching your pathetic smoke bomb fail to give the results you so desperately wanted. Still committed to making an exit, you quickly draw up your cloak to cover half your face, you turn, and run to the nearest exit. Everyone stares with confusion painted across their faces...." (Poor rolls are the best rolls)

its intentionally super vague - up to you and the DM. i play you also have to have proficiency in arcana to do most magic potions.
i also wouldn't say 'any' potions.....'most' potions is probably better.
