Like how many can I choose? How to understand which animals have my charactar already seen? For example, if a druid worked for a bit in a zoo, that means he`ve seen them all/quite a lot? Thats kinda cheating, so, I guess there should be like a limitation. If you know anything related to this topic, please let me know about that. Thanks!
You would have to have that expressly in your back story unless your DM makes you do it. I personally would require a specific background to go with that back story. Sage or Noble most likely.
Also, only the largest of empires have zoos, and I would not let any zoo have more than half of the animals.
For example, any zoo that has more than 1 dinosaur would not be likely to have the normal beasts. I could see a zoo having all the real world current animals, or having all the Giant animals, or having all the Dinos, but not all of them.
On the other side of that, there are really only a few animals that people end up using - unless you are trying to spy on herders.

1/4: Velicoraptor, Wolf, Giant Wolf Spider, Giant Badger
1/2: Ape, Reef Shark, Warhorse, Crocodile
1: Dire Wolf, Giant Octopus, Giant Vulture, Brown Bear, Deinonychus, Giant Hyena, Giant Spider, Giant Toad
If you are a Moon Druid, the list is slightly different, and of course has more CR.

Xanathar's has some guidance on that, else it is at the discretion of the DM to tell you what animals make sense.
Not really, no. It's typically up to the DM and the player to work together to determine what animals the druid could have realistically seen.
XgtE has options for what animals you would be likely to encounter based on what kind of area you grew up in, if you have it.
