Does that mean the sorcerer are allowed to attack the said creature using spells as attack on opportunity ?

I mean, if it could be done, that means.. a Warlock with devil lance invocation and spell sniper feat will have 600 feet range eldritch blast and could AoO one creature he could see. So much so that he basically become a walking sentry tower of sort (albeit only once per turn since AoO uses reaction ?)
Your guess is right, that's not how it works. Warcaster doesn't increase the range of your Attack of Opportunity, it just gives you more options on what you do with that attack.

Yeah, it replaces the AoO which occurs before the trigger (moving out of reach).

You can replace an AoO with a spell, but the AoO has to trigger as usual. That means leaving melee range.

Yes, this is why the person moving can change their mind and stay still if they want after the OA or spell goes off.
