Out of Lizardfolk and Tortle, I would go for Lizardfolk. The two share a lot of features, even both having natural armor... and although the Tortle's guaranteed 17 AC is really solid, a Lizardfolk still gets a solid 13+ DEX... even if you've only got +2 DEX, if you carry a shield you've still got 17 AC. However, Lizardfolk has the Hungry Jaws feature, which gives you a bonus action atttack that you can use a limited number of times per day. One of the worst things about Spores Druid is, despite giving you a unique transformation that gives you a boost to melee attack damage, you still only get one attack per turn. Lizardfolk gives you a built-in Bonus Action attack that also benefits from your Symbiotic Entitity feature.
One Gimmicky race that I have built as a Spores Druid before is the Grung. They have the "Poisonous Skin" feature, which modifies your attack in a unique way where, if you make a piercing attack, you can force the opponent to make (fairly low DC) CON saving throw or take an additional 2d4 Poison. So despite only getting one attack per turn, with Symbiotic Entity, if you're wielding a spear two-handed, that one attack could potentially deal 1d8 Piercing + STR Modifier + 1d6 Necrotic + 2d4 Poison. Plus colorful frogs and mushrooms are pretty well tied together, even if it's just on blacklight posters.
Sure, as long as the DM allows Ravenloft Lineages and Ravinica or Tasha's subclasses. Death and decay are a good thematic match. Also, if you pick this lineage after creating something with a flying speed like (aarakokora, Owlin, Winged tiefling)...or swimming speed (triton, Locathah, etc) or climbing speed (Hadozee, Grung, etc.), you keep it.
