I always wanted to play a thief or the fantasy of a thief at least. Is it recommended in Curse of Strahd ? I am currently level 3 close to 4 but the dm is giving me the chance to switch if I want.
Without spoiling anything. Will I be useful later on or just be... there as in too situational. Currently we have pal/lock, sorc/lock, cleric, wizard and two fighters.

The most important thing is that you like the class and the mechanics. It's more fun to like what you're doing instead of worrying about metagaming. I suppose it may matter more depending on what you would run after Curse of Strahd and if your characters continue to do other things. Obviously more urban environments may possibly suit the idea of your character better.
I'd say Thief is a slow build up with some awesome things that come later but CoS will probably run you to level 10 for the ending. It sounds like you have plenty of roles filled to not need to worry about how you fit in. It also sounds like since you have 2 friends already multi-classing might mean you have some min/max friends playing and maybe your DM doesn't want you to feel like your class is ****** (hexadin for example) .
I'm running CoS for a bunch of beginners right now and I've been letting them retcon some things until level 5-6 since they're still getting used to mechanics. So that might be the reason your DM is suggesting that. If he thinks it's more balance of power then maybe you can work out some parameters for rules of you doing poisons. This doesn't appear in PH but it's in the DMH
There's a crafting section that you could modify to make sense during downtime, to add to your weapons to adjust for things you want to do. Coat your weapons, plan an assassination via RP instead of combat, etc.
Yes, you will be useful. Having a Rogue in the party is always--assuming the Rogue isn't a murder-hobo whom also steals from the party--useful. What matters is playing what you enjoy.

My DM apparently found on reddit a way to extend our campaign to level 15 through homebrew additions? Dunno if it makes any difference or not. I guess i am in a sense worrying about the meta gaming part but... i am more of a role player. But being a thief is to steal stuff (within sense of course and not from the party or someone important to the party)and so far we barely got to an urban area. But i don't want to be forcing my party to just go to urban areas for my fun and stop the flow of the story. But at the same time i spend most of time being the chef of the party and that's about it.

So having never played CoS I can't speak to the "optimal" roles for that module but as someone who loves playing rogues I can say rogues are very fun. What you do may depend on what your biggest concerns are about how you don't fit with the party. If you want to do more damage, consider the Assassin subclass instead as it gives you a little more ability to inflict high amounts of damage early in the combat. Scout can also give you some options to control the battlefield around you a little bit and give your party some help focusing attacks on an enemy. Otherwise thief is great and gives you some great abilities. You talked about there not being a lot of options to steal in the campaign so far but those skills can be used just as well to scout ahead and get a lay of the land ahead of you before the party storms in and could let you optimize your strategy and avoiding walking into something really bad while unprepared. If your DM found a way to take you to 15 in the module then you will also, as a thief, gain the ability to utilize magical objects that you shouldn't necessarily be able to. That can be pretty awesome for navigating traps or gaining an unexpected advantage over your enemies.
