So I dumped inside Curse of Strahd where we fight a Arcanoloth with my druid 5, monk 2 halfling(stout) with 7 other PC where DM has fire balls and counter spell for days and the creature can fly and go invisible at the same time with out concentration during that time it manage to down 5 PC's (including mine) and kill another PC
I think my character surviving this fight is very slim and I want to have a back up character at the ready so Im open to suggestions any build that would help for this and possibly for the remainder of the campaign

Definitely a tough monster, but you should have had an edge with your numbers.
Curse of strahd has a lot of monsters that are weak to radiant and fire damage. So paladin, cleric, Wizard, sorcerer should be good choices.
Arcanaloth is resistant to fire
