Two weapon fighting doesn't work with ranged weapons. You'd have to have thrown weapons to get a ranged attack with two weapon fighting. Crossbow expert has an option for getting the bonus action attack with ranged 1 hand weapons.

Since Gunslinger is a Homebrew, I am not very familiar with it but after having a quick lookup I have discovered a few inconsistencies with your build. First off what is volatile shot? I am guessing you did a typo and meant Violent Shot instead. If that is the case then you need to realize and you need to spend 3 Grit Points for every attack you are trying to make. It s a little difficult since you are trying to use 30 Grit Points when your build only has access to 4 per short or long rest. You do regain 1 Grit point for every Nat 20 and I stress Nat 20 not crit because that is what is written so I see no possible way for you to regain enough Grit Points to spend 30 in one turn.
Also as Jhfffan already pointed out Two Weapon Fighting does not work with Firearms so the best you can do is 9 attacks. There is also the question of reloading as the typical firearms a Gunslinger uses has to be reloaded with a attack or a Bonus Action after a certain amount of shots.

I have 10 attacks each dealing 12++3d8+4d10 for an average of 65 dmg each for 500 damage and then 4d6 sneak attack for another 14 to 514
then smites: 5 are max for 12d8 each, totaling another 270 for 784 then 5 almost max smites for 10d8 each, totaling another 225 average for 1,009 damage

Oh, sorry [facepalms] you’re right. 18 levels is required. The piercer feat states ‘you can roll an additional damage die when determining the additional piercing damage the target takes’ - which also means I have miscalculated the additional dragon’s wrath damage. Since the revolvers deal piercing, so does the sneak attack.
I only need to spend one grit pit per attack - violent shot (sorry, is a typo) makes it 4d8, then crit for 8d8 and piercer for 4d8. I was under the impression grit points were on crit - probably should have read up on the rules more.
I thought two-weapon fighting was with all non-two handed weapons, including ranged.
The gunner feat allows for the ignoring of the loading property of firearms, although now that you point it out I’m unsure if reload and loading are the same or not.

Ability Score Improvements (bard 4/8/12): Cha +4, Lucky.
Initiative +11 (+3 for dex, +3 for JoT, +5 for alert); can get 1d6 more if we take Ambush, but +11 and Lucky seems fairly safe already. Stealth +15 (expertise)
Grand Total: 64d6 fire (16 rays of 2d6, critical) + 102d8 radiant (17 attacks of 3d8, critical) + 2d8 (rapier)+4d6(sneak)+2d6(technique)+3(dex) = 716 average, range 177-1255

That will cost me 4 damage (dagger instead of rapier), but I can switch to college of whispers, which will get me an extra 8d6 psychic damage (crit), for a total of 193-1343, average 768.
Now we have MotM bugbears, we can better this. It means we have to lose either Alert or Lucky, but it's getting us a base of 2d6 per attack (34d6), all critical (68d6), which adds 68-408 damage, average 238, for a grand total of 261-1751, average 1006.

To hit is 11, with automatic hits (crits) on 19 or 20. I haven’t worked out the chance of crit and therefore automatic hits with elven accuracy. Character has +17 to stealth and is invisible in darkness, with a range of 120ft and an initiative of +15.

Two weapon fighting doesn't work with ranged weapons. You'd have to have thrown weapons to get a ranged attack with two weapon fighting. Crossbow expert has an option for getting the bonus action attack with ranged 1 hand weapons.
Since Gunslinger is a Homebrew, I am not very familiar with it but after having a quick lookup I have discovered a few inconsistencies with your build. First off what is volatile shot? I am guessing you did a typo and meant Violent Shot instead. If that is the case then you need to realize and you need to spend 3 Grit Points for every attack you are trying to make. It s a little difficult since you are trying to use 30 Grit Points when your build only has access to 4 per short or long rest. You do regain 1 Grit point for every Nat 20 and I stress Nat 20 not crit because that is what is written so I see no possible way for you to regain enough Grit Points to spend 30 in one turn.
Also as Jhfffan already pointed out Two Weapon Fighting does not work with Firearms so the best you can do is 9 attacks. There is also the question of reloading as the typical firearms a Gunslinger uses has to be reloaded with a attack or a Bonus Action after a certain amount of shots.
How are you getting crits on a 19? You need 18 levels of Gunslinger to achieve that and you only have 11 levels...
I haven't really dived into the math but straight off the bat how on earth are you tripling Sneak Attack damage on your first attack?
When you sort out the build a bit more I am happy to take a another look.

then smites: 5 are max for 12d8 each, totaling another 270 for 784 then 5 almost max smites for 10d8 each, totaling another 225 average for 1,009 damage
average damage is 1,009
max damage is well over 1,500 maybe even 2,000

Oh, sorry [facepalms] you’re right. 18 levels is required. The piercer feat states ‘you can roll an additional damage die when determining the additional piercing damage the target takes’ - which also means I have miscalculated the additional dragon’s wrath damage. Since the revolvers deal piercing, so does the sneak attack.
I only need to spend one grit pit per attack - violent shot (sorry, is a typo) makes it 4d8, then crit for 8d8 and piercer for 4d8. I was under the impression grit points were on crit - probably should have read up on the rules more.
I thought two-weapon fighting was with all non-two handed weapons, including ranged.
The gunner feat allows for the ignoring of the loading property of firearms, although now that you point it out I’m unsure if reload and loading are the same or not.

Now we have MotM bugbears, we can better this. It means we have to lose either Alert or Lucky, but it's getting us a base of 2d6 per attack (34d6), all critical (68d6), which adds 68-408 damage, average 238, for a grand total of 261-1751, average 1006.

It’s the same language for crits in the PHB. You’d roll two additional damage die, IMO. If you are right it’d be 10d8, however, as you’d roll one additional revolver damage dice, which is 2d8.

Die is singular, so you roll only an additional 1d8. This type of stuff is why brutal critical and the like are bad with greatswords.
