TBH, any animal pet is a RP element. That being said, the mouse/rat has one useful ability:
Keen Smell. The rat has advantage on Wisdom (Perception) checks that rely on smell.
IF your DM is okay with using this, your pet has a sense that is a great way for your DM to fedd information your group would normally not know. Without certain animal control spells listed in other posts, your pet could be trained to warn when it catches some weird odor like a bloodhound. It could make your character aware to avoid surprise in certain situations. Wake a sleeping character or just help with watch as an additional sensor. Think about how a pet dog reacts and overlay that on a trained, friendly mouse.
The mouse also comes with Darkvision and proficiency in Perception which leads me to believe the intent beyond RP is to have a friend while alone on the street that can give you en edge in looking for/ avoiding danger while not feeling lonely.

IMHO, Earthdawn is still the best fantasy realm, Shadowrun is the best Sci-Fi realm, and Dark Sun is the best D&D realm.
One of my friends has a warlock with the urchin background and we've started imagining a "Ratatouille" situation in which the mouse is really piloting the character under his hat.
I would use the mouse to get keys, flip locks, knock things over for distractions, steal things (food, gold, gems etc.). Your limitations is your imagination... and the DM's.
and you can use it to untie you if you are bound by ropes!
