In Player's Handbook playtests 2 and 3, the rules glossaries included updated versions of several spells: Aid, Barkskin, Guidance, Prayer of Healing, Resistance and Spiritual Weapon. In all Players' Handbook playtest since, the rules glossary has not included updates to spells, yet says that it completely replaces any earlier rules glossary. Furthermore, while later playtests have updated some spells since then, none of the originally spells from playtests 2 and 3 are mentioned.
Does this mean that Aid, Guidance, Spiritual Weapon etc. have reverted back to the 2014 Player's Handbook versions of these spells for the purposes of playtesting OneD&D?
Well, aside from the changes to spells in the last two, for purposes of playtesting, yes.

is it more appropriate to use the 2014 versions of Aid, Guidance, Spiritual Weapon, etc in the playtest? i do hope we're still using the UA5 Eldritch Blast that scales with Warlock level instead of character level. since the spells aren't in the rules glossary, 'yes' doesn't fit the situation well without receipts. unless something was mentioned in a design note in later UA documents or (deeep siiiigh) buried in an official UA video (as has happened) then it should be treated as not having been redacted. additionally, 'no' could easily be said to apply since each UA document states that you can add and combine and forget any UA document you like. just, maybe mention what you used when you fill out the survey.

So in terms of what they tell us it seems that you are not expected to use bits and pieces of previous Rules Glossary sections, only the one from the latest playtest document.
I think this makes some degree of sense since the goal of each playtest is to then get feedback on that specific playtest; while the surveys do allow you to enter some general thoughts and you could certainly mention previous playtests, they're only really asking about the latest document.
They've also said in one of the videos that some of the things they've put into these were just to test initial player opinion to a proposed change; we saw this early on when each playtest had a slightly different version of the inspiration and critical hit as they presented different ideas, presumably so they could see which was the most popular etc.
While that doesn't mean that the changes to Aid etc. are being discarded, I think you're supposed to just use the 5e versions except in the playtest that specifically included those alternate versions of the spells. You can of course mix and match if you really want to, but the next survey is only going to be asking specific questions about what's in playtest 8.
On the other hand they've changed the format to now have a specific Spells section that didn't exist before, so you could just chalk it up to an inconsistency and use them anyway as if they were in a separate spells section. But yeah, my thinking overall is that you're not really meant to be running all the playtest material at once, unless there's something else you specifically want to compare against.

no, the spells are meant to stack. Crawford mentioned this change in one of the videos. I would assume one of the ones right before they changed the organization
spells follow the stacking, with latest version of the same spell overwriting rule, much like feats.
