I'm playing a Dragonborn Fighter who uses a Rapier and is dex based. The damage die is 1d8+6 because my fighting style is Dueling. But shouldn't it be 1d8+8 because I have an +4 Dex, +2 Prof bonus, then the +2 for my fighting style?
warforged make fine fighters imo. As for subclasses, luckily fighters have quite a few interesting subclasses.
The battlemaster is basically what the fighter should be, it allows you to pick and perform special maneuvers to enhance most things youre gonna wanna do. Wanna be a sneaky dex fighter? Theres a maneuver for that! Wanna be a big brute pusing people around, the battlemasters got you covered there aswell. This is probably the best choice if you wanna be a more grounded fighter archetype but still have a bunch of cool stuff to do.
The runeknight is interesting in a similar way. It lets you pick from a list of runes which grant you both a passive and abilities. This means you can customize your fighter pretty well as you level up and the combination of active and passive abilities can really make your charater stand out. Another key feature of this subclass is that you get to grow larger, so if you ever dreamt of your warforged becoming the irongiant, this is the subclass for you.
The Echo knight is very interesting because it comes with the ability to create a sort of image of your character rom which you can make your attacks or even teleport to with a bonus action. While the previous 2 sublcasses probably have more powers, the echo knight shines because it gets to use its powers more often, itll feel more like part of your characters innate skillset... Very powerful
Lastly the psy warrior also gives you some cool abilities. In my opinion its not quite as awesome as the first three subclasses I listed as it doesnt really allow you to customize or anything, nor is it as powerful as the echo knight, but it is certainly fun. People like to call this the "jedi knight subclass" because it comes with the abilities to basically force jump and force push with your mind.. Again, very cool, but not quite as cool as the others imo.

Ever since the game moved away from fixed racial stat bonuses towards just giving you 3 points to allocate wherever you want(as long as all 3 points don't go to the same stat), the idea of some races being better for certain classes than others is much less of a Thing than it used to be, at least from a mechanics perspective. There are still culture/history aspects that make some combos more "on brand" than others, but that'll depend on the world you DM has created. These days, pretty much any race can make a good fighter.
As for subclass, Fighter has a wide range of options. Some might be better at melee or ranged, while some work well for both. Some will give you a bit of magical ability, some focus purely on martial prowess. Some are more "fiddly" with maneuvers, runes, psionic powers that you need to manage over the course of a day, others are more straightforward and just make you better at the things you're doing. Some are better if you're offensively-focused, some are better if you want to be a tank. Do you know what style of Fighter you want to be?

Prof bonus is not added to damage only to chance to hit.
