I am putting a multiclass idea out there and want some feedback.
Lvl1: Fighter
Lvl2: War Cleric
Lvl 3-6 Fighter (Extra attack, warcaster at lvl 4, Champion subclass to crit fish)
Lvl 7-10 War Cleric (Main reason is spirit Guardians while being in the fray)
Lvl 11-20 Fighter.
Provided I don't need my Bonus action for something else, I still get the 4 fighter attacks at lvl 20, and I get to crit fish on an 18-20. Is this a bad build? I know it is likely sub optimal, but is it bad? I like the idea of a warpriest type character, but want to be able to attack a bunch which is why I focused on fighter.
Just to clarify, with that plan you will be Champion 15 / War Cleric 5 at level 20, so you do not get the Extra Attack (x3) feature, for that you need to get to Fighter 20.

I believe the OP is referring to the war domain power that allows an extra attack as a bonus action WIS mod/long rest, so at fighter 11, they’ll still get 4 attacks a round a couple times a day.
To the OP, if it seems like it will be fun for you, go for it. You might be spreading your ability scores a bit thin, which will be an issue. Likely you’ll want high str and con, not leaving a lot for wis. So you won’t get many of those bonus action attacks, and the save against your spirit guardians will be pretty low. Enemies will still take half damage, and that’s not nothing, but by the time it’s coming online, it’s not likely to be super-effective. Are you sure the campaign is going to level 20? Most stop in the 11-13 range, we’ll before your character reaches your goals.
Also, that bonus action extra attack isn’t so great. Spiritual weapon does about the same thing for the same bonus action, and for one spell slot, you have it every round of a fight, dealing force damage at range. Although that’s assuming your party isn’t looking to you as the main healer, which often means that bonus action will be spent tossing out healing words.
So, as you say, it’s probably not optimal. But bad is subjective. If you have fun playing it, it’s good.

Oh, you might be right, WIS mod times per long rest was not something, I would consider equivalent to "4 fighter attacks", especially with a Fighter 15 build. Did not even think about that.
Ahhh, I guess I didn't think about saves. I don't actually have a campaign yet. I'm just brainstorming a character idea to pitch for my next campaign. I'll continue to brainstorm because those crappy saves make the character seem less fun to play.
You could easily make a cleric fighter multiclass work. However, you want to consider what it is you're trying to achieve. If you're going to play like a fighter, first and foremost, then we need to view those cleric levels are being supplemental. You could use early spell slots on Bless, and you'll be a good party member because bless helps everyone no matter what. It also will be hard to break your concentration because you're proficient at CON saves thanks to starting fighter.
But, if your goal is to become a cleric who can jump into a mosh-pit of monsters and take a hard beating, all the while your concentration on spirit guardians never breaks thanks to CON save proficiency and warcaster.... then all you need is just one level into fighter. fighter 1, cleric 9, for example, has access to spirit guardians at the 5th level and spiritual weapon and a lot of spell slots, and can totally jump in and do a lot of damage. That damage is gonna be insane, and you won't suffer in concentration.
Consider that most campaigns don't actually reach high levels. You need to accept that realistically, your fighter/cleric multiclass is gonna have to make some compromises to make the fantasy work. If you want a character who's a good martial, can jump in and attack a lot while they have spirit guardians active, then maybe what you're looking for isn't a cleric/fighter multiclass... it's an Oath of the Crown Paladin.
In my opinion, to make fighter worth it, you just need 1 level for the armor/shield/CON save proficiencies. But if you want to actually USE fighter for it's martial capabilities, you need at least 5 for extra attack. If you want to use cleric for spirit guardians, then you need 5 levels to access 3rd level spells lots. Then, we're talking about a character that needs to be lvl 10 in total to "come online". Meanwhile, an oath of the crown paladin gets extra attack, AND access to spirit guardians by lvl 9. And of course, the usual cleric spells like bless and whatnot.
This isn't a criticism of the build, mind you. Rather, it's an invitation for you to examine your own build and consider what it is you're looking for and why the pieces you've picked make sense. Do you like action surge and war priest channel divinity that much? Then go for it your fighter/cleric multi. The point is to think about what you're looking for, and decide accordingly.
A Great Weapon Master FIghter / War Cleric works ok. The guided strike and bless to counter the -5 attack help get the +10 damage on a hit. Extra attacks occasionally through the feat and occasionally through the Cleric domain means a chunk of extra smashing.. I like this better than the spirit guardians...I would start....
Fighter 1, then cleric to 2. Then fighter to 5 or 6 and then back to cleric. There are lots of first and second level spells you can take that are useful besides bless, as you won't need any combat spells. Champion is generally considered the weakest fighter however it's specialty of increased critical hit is more beneficial with this combo as it will proc the bonus attack....
