Currently I am multiclassing as Fighter/ Rogue type character however when I look more and more into it
Rogue seems to be a better guard than any Fighter. In your guys opinion how many levels of fighter and how many levels of rogue should I take?
right now I am low level and have taken 2 Rogue/1 Fighter. right now I am thinking 50/50 split would make a pretty good Guard or maybe even pure Rogue would be really good
Really, any class can fill the role with the right subclass choice, they're just going to go about it differently. That said, I think Cavalier fighter is good for a guard. Forces enemies to attack them, can stop people moving past them. Heavy armor and higher hit points. When I think guard I think tanky characters, but again, any class can really pull it off.
this is true however some classes have to try harder than others and some are more famous for helping your typical guard than being a guard themselves. Mages or warlock would be great assistants to a guard using divination spells but they probably wont be the main people you would meet as guards
I agree with the full cavalier route, they have lots of things to stop enemies, which is pretty much a good guards ideal. YOU SHALL NOT PASS!!!! Sentinel feat with other fighter options would work as well, such as Eldritch Knight, or Paladin Oath of the Crown would be good fits if you want some spellcasting to supplement. But that is really a preference thing if you want spellcasting.

You fear it more than the strike of a viper, the ravages of disease, the ire of a lover. The answer is always death. But death is a gentle mistress with a sweet embrace, and you owe her a debt of restitution. Life is not a gift, it is a loan."
Rogues are really bad at being a guard the only way it kind of works is with one level in fighter so you can use medium or heavy armor with a shield and two weapon fighting then pick swashbuckler and maybe Duke wielder. Otherwise guard are typically protrated as a fighter type class in medium armor with a shield and a spear, witch would work if you pick up polearm expert so you get a free bonus attack
