In a few days my friend will be hosting a one-shot with a level 15 party. All I know is that giants will somehow be involved and it’s level 15. Since it’s so high level I can really do an interesting multiclass and get creative with it.
What do you guys recommend?

Take the Multiverse Bugbear as your race. They deal an additional 2d6 damage on any attack roll they hit against a creature that hasn't taken a turn yet in combat.
So the idea is to maximize your number of attacks you can make in that first round. So you want to take 3 levels of Ranger to get Dread Ambusher... this lets you make one additional attack on the first turn of combat when you take the attack action, and that attack even deals extra damage. Importantly, if you can somehow take the attack action twice in a turn, you get that Dread Ambusher attack for both Attack Actions. So with that in mind, you want 11 levels of Fighter... this is to get you Action Surge at 2, and Extra Attack (2) at 11. I'm going to recommend going for Battlemaster, and your most important maneuver will be Trip Attack... use your Trip Attack to attempt to knock your opponent prone, in order to give you advantage for as many of these attacks as possible. Finally, take just a single level of Cleric to take War Cleric, which lets you make a full weapon attack as a bonus action.
Grab any weapon that deals a d12 of damage... on your first round of combat that's 9 attacks, potentially 8 of them at Advantage. So you've got a potential damage output of 9d12+2d8+18d6, plus however many Superiority Dice you're willing to unload in this... you'll have 5 total at this stage, and they'll be d10's... so if you save all your superiority die for this one huge burst that's an additional 5d10.
You can toy around with the specifics on this a lot... you could drop War Cleric and just take an additional level in either class for another ASI. Maybe take Polearm Master to keep that bonus action attack... maybe use that bonus action for Hunter's Mark instead. Either way, you have a lot of room to customize this concept further, but I would at least recommend taking the Alert feat for the boost to your initiative.
Thought I replied to this last night but seems I didn’t - so, like 6thLyran it’s really more about what interest you. By L15 almost any multiclass should have come on line. Since it’s a one shot are there things you’ve thought about but haven’t tried because the don’t come together early? Are there classes you have never played that you could try ( or races for that matter)? Do you want straight melee damage? Nova damage, steady Dpr? Or do you want spell casting? If the latter do you want support? Blasting? Mixed? It’s kind of hard to make suggestions with so little to go on. Here is one tho just for kicks that could cover a little of all of those: a variant human Fey warrior ranger 6/ variant mind sorceror 9
I wish I could take credit, but when Multiverse came out, a lot of folks on here were theory-crafting ideas on how to exploit the new Bugbear, and what I posted was just the version of that concept that I remember liking the most, although I don't remember who actually suggested that particular build.

That depends on what sort of character you want to play. What were you looking for in general?
Find your own truth, choose your enemies carefully, and never deal with a dragon.
"Canon" is what's factual to D&D lore. "Cannon" is what you're going to be shot with if you keep getting the word wrong.
