In January, they're releasing a set of three books, updated versions of Tasha's and Xanathar's plus Mordenkainen's Monsters of the Multiverse.
What do we know/can guess in regards to whether the DDB versions will be considered the same or separate versions to the ones already on sale?
To be specific, if I were to buy those two on DDB now, will they be updated for free when the updated versions come in January, or will they be considered separate and if I wanted the updated versions, I'd have to buy them again then?
Additionally, if I wanted MotM, could I still buy it and get the same discount like normal with other bundles?
What do we know at the moment about this?

Can't tell for sure, but in the past such updates were considered to be or at least treated as errata, and DDB was required to update their sources accordingly. MMM is a bit murkier, but presumably going forward there will be no reprints of the original Tasha's or Xanathar's and for the physical editions they'll all be considered the same book, even if from different printings.

Looking at the announcement, it looks like they're not updating Tasha's/Xanathar's, but Monsters of the Multiverse will have a pretty substantial update to the Playable Races. I'm guessing that it's mostly going to be codifying the optional rules from Tasha's directly into the race statblocks and focusing on the increased dismissal of alignment being tied to race.
Looking at the announcement, it looks like they're not updating Tasha's/Xanathar's, but Monsters of the Multiverse will have a pretty substantial update to the Playable Races. I'm guessing that it's mostly going to be codifying the optional rules from Tasha's directly into the race statblocks and focusing on the increased dismissal of alignment being tied to race.
I wouldn't expect anything more than some errata for Tasha's and Xanathar's, but I don't know what to expect from the updated races. I am certain that they will be brought in line with Tasha's, but they could see other updates the way Dragonborn did.
I think Dragonborn especially is in need of an update. Making it universal for Dragonborn to replace an attack with a breath weapon would do a lot to make them much more versatile in combat.
I'm not sure what other updates the system really needs. I think they might remove Sunlight Sensitivity from Drow and Kobolds to make them less of a headache to run in games that don't take place exclusively in the Underdark. I think I'd also like to see an update to the base Human... as it is, you never see anyone play as the base human when Variant gives you a feat right off the bat, or if you want a more customizable character you would go for Half-Elf.
When it was announced it was clear MMM when it's initially physically released will only be available in the slipcase set (sale driver). It will be released separately, but a date for a separate release hasn't been made (I'd guess at least a month or maybe a quarter to let the gift set sales cool down). I am curious how that will affect any implementation/updating DDB may do for the book.

If you're referring to the discounts from already owning content purchased through DDB when purchasing a bundle or source through DDB that contains the content, yes. The existing DDB content will be discounted from the DDB bundle or DDB source. If MMotM becomes available for pre-order this week on DDB, it will not get the $19.99 price as pre-orders are excluded from the Cyber Week deal.

Add Duergar to that list, I don't know if I'm pro or contra that move but the evil dwarves also have fear of the hate-orb. Easiest would just to make Variant Human, base human and drop variant as a choice.
The tricky thing about making Variant Human the Default is that Feats are optional... so if you're playing a game where the DM doesn't allow feats, then the Human race is essentially unplayable, which is kind of crazy to me.
I'd be pretty surprised if they just went that route. Not that it doesn't make sense... I've never played in a game where feats were banned. But I'd still be surprised if they basically require feats even if it's just for this one race.
If I had to guess, they'll probably just have the base human have the standard "+2 +1 +1" Ability Score thing, and just give the player a big mess of skill, language, and tool proficiencies. My guess is that it will be something like, "You gain proficiency in any 2 skills of your choice, in addition to one language proficiency of your choice and one tool proficiency of your choice". It probably still won't get played in any table that allows feats and the variant human, but at least it's something that can lead to some creative character choices while leaning into the versatility that humans are presented with.
