If you're asking to roll crit on something that's not crit (not common 5e rules but there can be exceptions it's warranted), that's the workaround. If you're wanting all rolls to be crits, that's not 5e rules. DDB tries to implement 5e rules with some allowance for homebrew and exceptions.
If you're wanting to disable that functionality, there are occasions where some property or ability can grant critical hits. Just don't use it and make sure the DM can see when it's being used if one cannot trust the other players (though that's a bigger problem than DDB or any system can solve).

When I make a general attack roll, it shows as a critical hit in Roll20 no matter what I actually rolled. Apparently there is a setting in dnd beyond to turn this off but I can not find it anywhere. This is not rolling with advantage or anything fancy. It just shows up as a critical with every single roll and I do not want this. Is there anyway to turn this off?

It is likely your best option as well since Roll20 doesn't have a path to DDB that doesn't use a 3rd party as I understand it.

No, the automatic critical hit damage on dice rolling reflects the official rules of D&D fifth edition and cannot be disabled
