I was wondering if D&DBeyond has in their plans to have an interface or button, that will change a normal character sheet that I create into a simple stat block? The current system they have is to me personally quite clucky.
Possibly? There is a planned monster builder. There are no details on what functions it will have yet. I would consider PC to NPC conversions to be low probability, but not impossible. Either way, it will make NPCs easier to make, so there is that.
I too would love this... it is just so much more natural to create a monster the same way you would a player.. but want the monster stat block at the end of the day.
I've wanted this to be a feature for a while, but ever since I started working on a high-level blood cleric to act as a villain for my campaign, I've been trying to find a way to easily convert the character sheet I've made in the builder to a stat block without having to do all the copying and pasting.
You have to understand why this is kind of a tough thing to ask. It isn't too hard for a human to create an NPC stat block from a character sheet, but if anything tried to automate it, it would be just a huge wall of text and likely incorrect DCs and modifiers you would have to fix. Not to mention adjusting HP and CR manually any way.
If you made a character sheet for an NPC, just keep using it. If you want a simplified NPC stat block, you'll need to make it yourself.

you can use the platform Dnd Statblock generator and you can make a character into a monster and vice versa.
