I have no idea about how to go about making Rimuru, but I probably won't. Benimaru is a Fighter, Shion is a Barbarian, Shuna is probably cleric, Hakuru is a fighter?, Souei is a rouge of some kind.
What are your thoughts?

Only issue I see is that the majority of the characters in that show are absolutely stacked. Like, I feel like once you get beyond the first couple of arcs, Rimuru and friends are all at least level 20 in whatever class they are, if not beyond that. I feel like super powerful characters doing super powerful things is part of the shows appeal

I think your best bet is to just read through all the classes, subclasses, feats, and spells first (I also recommend reading about other character options too like races, epic boons, equipment, etc.), so you have a foundation in your understanding of what you can do in D&D. Once you know what you can do in D&D, it is then relatively simple to use the mechanics in D&D to simulate whatever character you want.
As someone who's seen the show I'd say that every character is extremely high level, some of which are around 20 or even higher in power.
Rimuru would be hard to make. Maybe bladesinger wizard who polymorphs (You know via polymorph, true polymorph if high enough level, etc) into a slime form as well as the other forms he can take.

Benimaru is a Wizard... as for how to go about making them, idk just compare the types of abilities they have to something that exists in D&D I guess?
But what about his sword skills?

No idea who these characters are but if Benimaru is a caster that also has sword skills, bladesinger or war magic wizard may be something to consider.

Fighter multiclassed into warlock would make a lot sense
