I am in a group that tries to meet up online once a month, and well the party has been having some rough times:
We lost our druid (player could not commit to playing at this time)
We lost our bard by character death
We are about to lose our cleric/ranger (Player feel likes there story is done [Planning on bringing in a Sorcerer])
My rogue has been down/close to death almost every fight (bad saves on my end)
I am worried that my rogue will not survive to level 8, and get a much needed CON boost. Would I be able to get some recommendations on a new PC to back up?
You party seems to have a strong melee presence (Assuming that the Paladin, Fighter, and Barbarian are melee combatants) so maybe another ranged caster to help out the Cleric would be an option. However, you should ultimately play what you want to play.

If you're looking for a caster, I'm a big fan of Warlocks. Eldritch Blast with the Agonizing Blast and Repelling Blast invocations make for great ranged fighting. Pact of the blade works well for when enemies get in too close (and maybe taking Misty Step as a spell for emergencies). Not much for healing, but hopefully your Paladin and Cleric have that area covered.
Play whatever you enjoy playing. That's the key. If you like playing your rogue there's no reason to stop playing your rogue. If your rogue has a survivability problem, address that. Are the encounters overwhelming the party? Is the party not working together effectively? Does the party lack an effective healer? Or are you just getting unlucky dice rolls? Your party is already a heavily-melee-centered party, so there's really no need for your rogue to ever be going up toe-to-toe with any enemy. Rogues are just as effective at range as they are up close. Stay back, stay hidden, when it's your turn you pop out, fire off an arrow, and then use your cunning action to hide again. You've got plenty of melee allies to provide the distraction you need to get advantage on your shots, so you'll be getting Sneak Attack on every arrow you fire.
But, if you are intent on switching classes, well.... I am a huge advocate for the cleric class. And if your current cleric is thinking of switching to sorcerer, your party will be needing a replacement. Clerics are awesome! But that's just my two copper pieces. Don't play what I want to play, play what YOU want to play. But whatever you play, have fun with it.
