I'm currently playing in a campaign where demons have made their presence known. I cannot seem to find what 5e says about iron and silver weapons. Have they released anything about their cost or what creatures they are good vs?

There isn't to my knowledge a compiled list of monsters susceptible to silver. If a monster is resistant to conventional weapons but silver beats the resistance, it's mentioned in their stat block. I believe many, though I'd hesitate to say all, fiends are in this category.
MM: night hags, wights, all the devils except lemures (because they don't have any resistance to piercing/slashing/bludgeoning attacks), all the were-creatures
MToF: deathlock mastermind (but oddly not the deathlock wight), all the devils
VGtM: yeth hound, warlock of the fiend
Descent into Avernus: all the devils, fiendish flesh golem
CoS: werewolves in the random encounter table by default leave alone anyone with a silvered weapon.
So they are just for overcoming resistances then. I have magical weapons already so it would be a waste to have a silvered weapon then.
You are correct. The PHB mentions silvered weapons. They cost 100gp more than their iron counterparts and overcome magical resistance. Other than that, they're normal.

Lower CR fiends tend to fall into that category, but stronger ones usually do not.

"Canon" is what's factual to D&D lore. "Cannon" is what you're going to be shot with if you keep getting the word wrong.
It could be due to devils being immune to fire, but demons having lost their traditional immunity to lightning damage.

Pretty much. It's not like 2nd or 3.5 edition where there were monsters that required a weapon that was both silver and magic to hurt.
