I want to homebrew a race that has a feature that adds its CHA mod to its AC when it isn't wearing armour. I'd also like it to, when a character has Unarmoured Defense feature from the Barbarian or Monk class, differentiate between the two and pick which ever is highest, either the Unarmoured Defense, or this Racial defense feature.
Is there a way to do this on the Homebrew creation tool, in a way that makes these additions automatic, without having to manually change a PC's AC?
If I've understood you correctly then it sounds like you want to give the player an alternative unarmored Armor Class calculation of 10 + CHA?
In that case I believe the Modifier you want to add would be Set -> Unarmored Armor Class with the ability score set to CHA, which should give you the result that you want. I say should because the modifiers are a bit of a minefield (there are a bunch that either don't work or don't behave like we expect), so hopefully someone will correct me if that's not the correct one.
But if it works as expected this should give you an additional Armor Class option of 10 + CHA, and the character sheet should automatically use whichever AC is best (it actually currently does this even if you're wearing armour, which seems like a bug, but oh well).
Update: Whoops, forgot that you probably also need the Modifier Ignore -> Unarmored Dex AC Bonus, this is because otherwise the calculation will be 10 + DEX + CHA as DEX is always added by default.

I'd like to point out that that's how that normally works; a lizardfolk monk's AC isn't 13 + Dex + Wis, it's either 13 + Dex or it's 10 + Dex + Wis. (This is explained in Tasha's Cauldron, in case you wanted to look it up yourself)
