Is there a way to make a weapon have a higher damage dice when the subclass reaches a certain level ? Say a dagger from d4 to d6 for example. (I know I can do this one manually or with a homebrew weapon, but I would prefer it on the subclass.)
Is there a way to have the subclass ignore armour and shield and have it so the AC is 10 + DEX + INT modifiers ?
Is there a way to add +10 speed when not wearing armour?

The answer to all of your questions is, outside of homebrew, no.
The answer to 2 and 3 are yes.
Set - unarmored armor class, ability score: INT should work. There are multiple modifiers for setting AC, so if that doesn't work we can try another.
Bonus - unarmored movement, fixed value: 10. This one is pretty straight forward.
Homebrew classes are planned, but will be a while.
