Do I brew it like the paladin's healing pool, but add a dice value to the action, or is there more involved?
That'd be the way to do it, so long as you're happy for the pool to scale in size but maintain the same die type.
If you'd like the size of the pool to be more limited, but for the die to increase in size then you'll want to look at how a Battle Master's superiority die are implemented, which I believe is just using snippet codes to give the correct die size at each level, it's otherwise up to the player to know that when they check off a box to use a manoeuvre, then they must also roll the correct superiority die for the bonus.

So I like the idea of a feature that allows a healing dice pool... ala Celestial Warlock... but I'm at a loss at how to homebrew it.
