So I made a Druid 2, monk 6 build for a campaign I'm in, and not quite sure how much of the monk abilities Transfer to wildshapes. Movement speed increase, Unarmored Defence, extra attack? Unarmed strikes Improvement? The dex save damage reduction at level 7? Kinda looks like it's going to essentially be a damn wolf with 6 levels of monk lol
It is pretty much what you said, but to use all the unarmed attacks and what triggers off of them you'll need to use an unarmed attack, NOT an attack with a natural weapon which would be considered a weapon.

You have to use your Monk damage for unarmed strikes, not your Beast's natural weapons. Keep in mind, your PC probably has a higher proficiency Bonus than the beast, and because it is a PC ability, you will probably have a higher attack roll than the beast's natural weapon attack. You can use either your beasts Strength or Dex for the attack roll and damage.
Bonus Action unarmed Strike will only be triggered from the an unarmed strike while in Beast wildshape... unless you can argue your Wolf can wield a Quarterstaff...
Stunning Strike and Flurry of Blows do not have to trigger from a Monk Unarmed Strike while in Beast mode, as Stunning Strike just says Melee Weapon Attack (which includes unarmed and natural weapons), and Flurry of Blows just says Attack Action (although i dont think this triggers from Multiattack from say a bear.. someone may need to confirm this). Again, Flurry of Blows uses Martial Arts for damage dice , but you use your own proficiency Bonus on the attack roll.
Deflect Missile (let alone Catch Missile) may require some discussion with youre DM. IE, using youre Antlers as an elk, paw-claws as a Lion, or Tail as a giant snake to deflect a missile could be argued.. but by RAW you would need a free hand to catch it, so unless you're an Ape you would likely never be able catch a projectile as a beast.
It all stacks, but you're limiting yourself pretty severely by only taking 2 druid levels. Druid-monks are usually primarily Druids. Monks are very ki-dependent, and monsters aren't any better at unarmed strikes than non-monsters.
Consider that if you swapped your levels, to druid 6 monk 2, instead of a dire wolf or brown bear, you could be a giant constrictor snake, for example. That thing is incredibly dangerous.
But really, Barb 2 is better offensively. Druid/monk is for AC. Monk 1 Moon Druid 2 Bladesinger 2 is a crazy amount of AC for your bear/wolf, and it just keeps getting better with more ASIs. At level 8, monk 1 moon druid 5 bladesinger 2 is enough for, say, a mountain dwarf to be Wis 18 Int 18, and next level you can whip out the snake, which at that point will be AC 20.
Open Hand Monk 8/Moon Druid 12 is a (almost literal) beast, especially if you take Polymorph. Kung Fu T-Rex, anyone?

You don't keep Keen Mind with Polymorph....
Wildshape specifically says you get to keep features but Polymorph you are completely different
That is 100% correct Optimus, but under the assumption you have a level 10 Moon Druid, yes you can Wildshape into an Air Elemental and retain Martial arts as well. I don't know why a Moon Druid would use Polymorph on themselves with access to Wildshape.
Polymorph your opponent into a box turtle, turn into a giant eagle, fly up in the air and drop 'em

Oh yeah Wildshape works 100% for that. Polymorph was specifically mentioned so I called it out as I saw it.
