He is a Dhampir so there's that. He carries a Quarterstaff (Reflavored as a slightly larger cane) that he uses to beat things with (Currently snoozing goblins). He also throws Darts(Forks) when out of range of physical attacks. SO basically I want to keep this flavor but still multiclass into something like either rogue or ranger for dread ambush. Being able to casually walk up walls and drop from ceilings to bash in peoples unsuspecting heads seems really cool too. If you guys have some build ideas feel free to throw them my way. The cane: a reskinned spear is better than a reskinned quarterstaff. If it's important to you that you not have a good reason to throw the cane ever, as soon as you reach monk 2/<ranger or fighter 1> you can make it a reflavored warhammer or battleaxe (or longsword).
The forks: You should stop using these as soon as possible, because they aren't monk weapons and there's no useful way to render them monk weapons, since you throw them away and they don't return. Instead, reskinned javelins are your best bet. If you multiclass into Rogue, you'll want reskinned daggers.
As a Dhampir, you'll gain Spider Climb at level 3, which at level 9 will render part of Unarmored Movement redundant, since gaining the ability to walk on walls won't do anything for someone who can walk on walls. Also be aware, as you character sheet correctly displays, your bite attacks with Con, not Dex or Wis.
I don't know what kind of Dhampir you are, but you should consider being an ex-Lizardperson, for the swim speed. Obviously you should avoid fly speeds, since you want to have a good reason to walk on walls.
You don't need Rogue or Ranger to be spoopy in the dark - you can just go Way of Shadow. If you combine this with Fighter 1, you can take Blind Fighting, making you a genuine terror while wrapped in Darkness.

Darts are not melee weapons, they are ranged weapons.

I'm not sure what monk has to do with either of those characters, especially Mad Mod. Seems like an Illusionist Wizard with maybe an artificer dip for magical tinkering would be better.

Just because your monk is proficient in a weapon doesn't mean it is a "monk weapon" which is a special classification of weapons for the purposes of the Martial Arts class feature. Read the class feature again.

Mad Mod is a game master that subjects people to mind-bending and traumatizing illusory realities. I guess it's his inclusion in the character inspirations is what threw me. You basically just want to take the cane aesthetic. That's cool. Shadow Monk 8 followed by a ranger dip could be very fun for you.

It IS a simple weapon, but it is NOT a melee weapon. It is a simple + ranged weapon. Monk weapons are weapons that are simple + melee and additionally shortswords. Beyond isn't coding it wrong, but even if it were, sometimes Beyond gets things wrong. You have to look at the actual rules.

No, darts are not monk weapons, they are weapons that monks are proficient with. There's a difference. The Martial Arts feature defines what "monk weapons" are.

DND does not code Darts as monk weapons. I know this for a fact. I have a mid-level monk and despite the fact that he has darts and is proficient in them they do not get any of the bonuses a "Monk Weapon" as defined by martial arts would have. it does not get the increased Damage size, etc. In their coding. It stays a d4 and works purely the same way as if any other character had one and used it.
There are other simple weapons that do not count for monk weapons either if you go looking and actually see all the criteria and not just stop at "simple weapon".
Don't throw darts...throw ninja stars...customize the name....darts sound lame unless you make them blow darts with poison tips. Monk weapons in 5e are ridiculous.
If you really want darts (silverware) as a weapon go Kensei and pick darts as your ranged weapon. Then you can pick spear/staff (cane) as your second weapon.
DnD Darts are a little more than silverware. The militaristic dart was somewhere in size between an arrow and a spear.
The darts that we use for the game originated as something about 1/2 the size of an arrow. Don't get confused by the darts we use today for playing a game with the darts that were used historically as military equipment.

1. The cane is a symbol of status from his house so he wont throw it, but he doesn't mind bashing in heads with it.
2. The Darts are monk weapons bud its a simple weapon.
3. Unarmored Movement doesn't matter to me because the Dhampir ability lets me climb WITHOUT HANDS and I'm probably only going to level 7 monk.
1. He was born a Human Dhampir for flavor reasons.
4. I don't like Darkness Shenanigans because its anti-party.
