Hello I'm a martial artist and I'm looking into playing a monk. What I'm trying to figure is how to apply the joint locks and crippling blows I've learn. By crippling blows I mean kicks to the knees, chokes or throat punches. The illegal moves in MMA.
Combat in D&D is far more abstracted than what you seem to be looking for. You can describe how you strike your opponents, but it won't have any mechanical effect different from "I punch him". Which isn't to say it's not fun.
Also, monks aren't particularly good at grappling by default. You can do it, but it requires building around strength, which is going to force you to neglect stats that are more important to the monk's powers.
You will probably have to homebrew your own subclass. Dnd has not really done a good job of translating martial arts into gameplay. The closest you will get to any of that stuff is open hand monk.
My DM would allow me an attack roll at disdavantage to try anything like you are describing. If i hit than my dm would come up with an appropriate penalty to the creature based on the situation.
Otherwise, when you hit with your unarmed strikes you can say its a kick to the knees. It would unfortunately still be the standard damage roll with no other mechanical effect applied to the creature. That is martial arts in DnD.😞
