Assuming you mean using the standard elephant stat block, it might be tricky. They are size huge, which means you’ll get advantage on lots of attacks when mounted. Just keepg in mind it usually won’t be able to attack, as you will be controlling it. If you want it to be uncontrolled, then it could attack (the rules are, unfortunately, unclear on who at the table actually controls an uncontrolled mount).
A downside could be its size. As a huge creature, it will take up a 3x3 area on the grid map. And it’s got a 12 AC. So lots of enemies can surround it, and it will be easy to hit, very easy as you increase in level. I’d also draw your attention to mounted combatant feat, where you can have the hits against it hit you instead. It does say say attacks can be redirected, it says hits. So someone hits your 12 AC elephant, and you take it instead, does not mean they need to hit your 20 ac paladin. The damage basically just transfers over to you. So it’s a tactic you might use sometimes, but doing it a lot will quickly drain your hp.
Also, the dex save buff from the fest won’t help much. With a -1 dex save, it’s going to take half damage most of the time.
Luckily, it has a lot of hp. But if you use it in mid- to high levels, I expect it would die after a fight or two.
Other things to consider, it’s huge. It won’t be able to go inside. What will you do with it when you have to go into a dungeon and you have a ladder to climb.
The ability to share spells like healing spells only applies to a mount summoned by find steed, so it won’t benefit from those.
