Hello! I'm making a character for a game I might not get into but making characters is fun and we start at level four. Would dipping one level of Sorcerer be useful if I plan to continue with only that one level in any non-rogue class? And if so, what stats should I prioritize?

I would say no - giving up your L4 ASI won't compare with L1 Sorc, even though Sorcs get their subclass at L1. L6 is the level where I would seriously contemplate the sorcerer dip.
I'd recommend Cha 14 and focusing on spells and abilities that don't rely on your CHA, like Guidance and Bless and Protection from Evil and Good.
If you want a few spells/cantrips without moving away from rogue much, you could always go arcane trickser as well and not have to give up rogue levels, unless you have another rogue subclass in mind that it wouldn't be worth it.
