A 9th level or higher tabaxi monk has a high walking speed and can run up walls, but will fall. Could they switch to climbing at the end of their movement, digging in and staying up?

Combining movement rules is a bit dicey. However, since just having a Fly speed makes you nearly immune to falling, I don't see why having a climb speed and being on a wall would be any different.
Sure, as long as the surface they're on is appropriate for climbing. Smooth surfaces require an ability like Spider Climb.

Given that they have a climbing speed as a tabaxi, it would be reasonable that they could dig in to a surface, provided it's a surface that could normally be climbed.
If it was a more difficult surface, a DM might see fit to make it a dexterity or strength check to stay on the wall and hang there, the DC adjusted up or down, based on how unforgiving the surface is to climb.
