I searched through the entire PHB and can't find the answer. Wizards and Clerics can prepare spells after long rest, IE. exchange spells of the same level. Sorcerers and Bards are simply known and fixed. I'm playing a druid and don't know which applies. Is there a list for all classes to see which applies?
Druids work the same as clerics, basically - each long rest they can prepare any spells they want from the Druid list. Paladins are the same but with half the magic. Artificers seem to work that way too, though I've not examined the class closely.
Wizards work a little differently in that each long rest they prepare spells, but only from those spells they have in their book rather than the whole wizard list.
Then most of the rest (Rangers, Eldritch Knights and Arcane Tricksters, etc.) work like a Bard or Sorcerer, learning spells as they level up and then always having all/only those spells ready to cast.
Warlocks are a bit weirder, but they also don't prepare a list, so are most similar to the Sorcerer/Bard group.
Tasha's optional rules do allow all casting classes a bit more flexibility with replacing their learned and prepared spells, so check that book out if you like.

You got wizards slightly wrong, but the rest is correct. I can make you a list.
--As a general rule, these casters can change 1 known spell every level and 1 cantrip every ASI. Rangers can change 2 cantrips per ASI, and Eldritch Knights and Arcane Tricksters can't change cantrips.
Prepared: Artificer, Cleric, Druid, Paladin
--Clerics and Druids can change 1 cantrip each ASI; Paladins can change 2 cantrips each ASI. Artificers can change 1 cantrip every level.
Known+Prepared: Wizard*
*Wizards can change cantrips after a long rest. They prepare their spells from their known spells, and their set of known spells grows as they level and as they find spells in-game; they have no mechanic for simply swapping out a known wizard spell for an unknown one, unlike other know-casters, but they also can't just prepare from their entire spell list, unlike other prepare-casters.
Note: I left out "slotless" casters - generally Barbarians, Fighters, Monks, and Rogues who gain the ability to cast a spell without using a slot, but there are other ways, like some Warlock invocations. These casters generally do not interact with know or prepare mechanics in any way - some class or subclass ability lets them cast a spell as if they know it or have it prepared, but mechanically, they neither know it nor have it prepared.
Note 2: Know-casters, when they can swap, usually can swap any leveled spell for any leveled spell they are allowed to know, without needing to obey spell level equivalency, and the same for prep-casters. There are very specific exceptions, generally attached to a subclass. The only general need for spell level equivalency is when swapping a cantrip.
Just to nitpick - Wizards cannot change cantrips unless they have the Tasha's optional feature Cantrip Formulas. Cantrips cannot be placed in the spellbook without that feature and Wizards can only prepare spells from their spellbook.

How can they change what they don't have unless they take a specific fighting style?

They can change fighting styles every ASI, so they can swap out of any style (which can be any 2 cantrips) and into any style (which can be any 2 cantrips).

So no, then. You can't swap into something you already have. The fighting style allows you to swap one cantrip per level but you can't swap from "Blessed Warrior" to "Blessed warrior" (for a Paladin). The rules literally say " you can replace a fighting style you know with another fighting styleavailable to paladins".
Blessed Warrior You learn two cantrips of your choice from the cleric spell list. They count as paladin spells for you, and Charisma is your spellcasting ability for them. Whenever you gain a level in this class, you can replace one of these cantrips with another cantrip from the cleric spell list.
When you chose a Fighting Style, one of your choices is Blessed Warrior. In and of itself, that doesn't let you pick a different Fighting Style, it just adds another option to the ones you can pick from. You pick up a Fighting Style at 2nd level, and may change one cantrip each time you gain a level You may be thinking of:
Martial Versatility
4th-level paladin feature Whenever you reach a level in this class that grants the Ability Score Improvement feature, you can replace a fighting style you know with another fighting style available to paladins. This replacement represents a shift of focus in your martial practice.
That's not actually from Tasha's. That's where you can swap out a Fighting Style for another Fighting Style, so you could potentially pick up Blessed Warrior again and change those two cantrips yet again.

If you choose the same fighting style you break the very obvious "replace a fighting style you know with another fighting style" part of the Martial Versatility feature.
You are correct. I apologize. I am not sure that you cannot replace Blessed Warrior with itself given that it does actually change something, while the others don't. Gods know why you would want to replace something with an identical copy. That's one of those somewhat inevitable RAW versus RAI versus ROF things. I'd allow it, I don't see the harm it would do.

Well, the rules are obviously quite clear on the subject and Blessed Warrior already allows you to change one cantrip when you level up in that class.

Druids are like Clerics. Otherwise you are spot on. I know of no list. Every class has some way of casting spells.
