Yea you need to check each feature/spell/reaction individually. It isn't always intuitive which features that does/doesn't work but it should always be clear when reading the specific feature/spell.
For example, Uncanny Dodge (Rogue/Ranger) doesn't work but Deflect missiles (Monk) does. And Danger sense (Barbarian) doesn't work but Evasion (several) does.
All Readied Actions use a reaction that just requires a perceivable circumstance, so you could ready an action for when someone says "Go", which would work even if you are blind.
So if ou were BLIND, could you still use a Shield spell?

The trigger doesn't require you to see the attacker and the AC bonus doesn't mention it either.

You don't need to know it is coming, the Shield spell is a reaction "which you take when you are hit by an attack or targeted by the magic missile spell"

And who says you don’t know it’s coming. You can still hear and as far as the rules are concerned an attacker just has advantage against you and you have disadvantage on attacks you make.
Can you still use your reaction if you are blind?
Technically, yes. But a lot of reactions require sight:

I would also add that opportunity attacks require you to see the target (many people forget that)
