Simply put I want to play a vampire. One that can hide it from the party at least somewhat. I'm not planning to do custom content or anything of the sort and would like to stick to the 'canon' things if possible; though potentially reflavored. Any advise/tips/etc to make it work? If I have the option I'd like to play a caster but it is, in no way, a requirement.
Sounds like you want to play a Dhampir with access to Vampiric Touch.
If you take a class like Warlock and use the Mask of Many Faces invocation to look like a different race, or at least a less undead version of yourself, then you should be able to get all of the flavor without giving yourself away immediately. You could also play a Wizard or Cleric (Death, Grave domains).
However, to get any closer than that, you'll simply need to talk to your DM.
You should play whatever class feels right to you. Sentient creatures are capable of choosing their own vocations without being type casted.
As long as you adhere to the mechanics of a class or race, the rest is just flavor to make it easy to play with. However, I don't actually see anything in the race's description that says how they look, other than implying their connection to undeath. You should be free to describe it however you wish.

I combined several sources of inspiration into my own take.
That does make me think of using an artillarist and basically playing Seras. But that would be non-traditional and I was hoping to play a more traditional one.
Edit: The more I think about it the more appealing it sounds so long as my GM allows firearms.

What about the shadow monk or a rogue class? Would either of those work? Also, do Dhamphirs HAVE to look... undeadish naturally?

Any class is fine.
Dhampirs pretty much just look like normal race with fangs as far as I know. The books don't give a detailed description.
