I'm really confused about this ruling help me understanding it.
a normal unarmed strike deal 1+str.
as for unarmed fighting
"Your unarmed strikes can deal bludgeoning damage equal to 1d6 + your Strength modifier on a hit. If you aren't wielding any weapons or a shield when you make the attack roll, the d6 becomes a d8."
the unarmed strike can change from (1+str) to (1d6+str)or(1d8+str)
basically changing 1 into a diceroll to already STR based attack. the adding str modifier part is just mentioning what has been written
as for martial arts there's two different noteable feature
"You can use Dexterity instead of Strength for the attack and damage rolls of your unarmed strikes and monk weapons."
and
"You can roll a d4 in place of the normal damage of your unarmed strike or monk weapon. This die changes as you gain monk levels, as shown in the Martial Arts column of the Monk table."
that mean i can use unarmed strike that 1d6 or 1d8+str because second option of martial arts is optional, and because this is still unarmed strike that using str i can change it into dex based instead.
so from what i understand is unarmed fighting can change the damage part while martial art can change the modifier part. or am i wrong?
Yep. Both the Unarmed Fighting Style and Martial Arts change the damage die, so since both have the option to replace it, you get to pick which to use on any strike. Additionally, you get to choose which stat among Str and Dex to apply to Unarmed Strikes. So you can absolutely get the 1d8+Dex attack that way.

Or use the ‘24 rules. Your damage starts at an d6 and at level 5 you’ll go to a d8 without a feat.
