Ok I want to make sure I read this correctly. With Regenerate the target player gets an initial healing plus on hit point at the beginning of the player's turn for the duration of the spell (1 hour). If the player dies and regains one hit point the beginning of the turn, does he become stable with 1 hp...thus almost unkillable for 1 hour?

If the PC is reduced to 0 hp and not killed before the start of his turn, he'll gain 1 hp and become conscious again. That's quite hard to kill, though by the time you're talking about 7th level spells the monsters have enough attacks that they can probably hit him twice while he's down, causing immediate death.
