Well there's always crafting to do, and spellcasters can create scrolls for any spells they know which could potentially save them in spell slots in the future (or they could sell them for some extra cash). Crafting is pretty well explained in Xanathar's Guide... at least, more thoroughly than in the PHB. Aside from that it's just a matter of what your party actually wants to do. If they want to say, "I spend the weekend at the casino gambling", you can either run them through a few games of chance... You could pull out a real-ass deck of cards and play a few rounds of poker, or you could ask them how they want to gamble. If they plan on cheating, do a sleight of hand check to represent the average of how they perform for the weekend and reward them some gold based on that. If they want to count cards maybe give them an intelligence check, or if they want to do some poker maybe give them an insight check to see how well they read their opponents.
